Quarantine Cooking: Lotus Biscoff Truffles

I’ve always been one to enjoy versatile snacks and flavors. Lotus Biscoff Cookies are definitely one of the most versatile flavors I’ve worked with. They pair perfectly with almost any drink may it be tea, coffee, or hot cocoa. The cookies also are very easy to introduce into recipes and this is one of them.

The Lotus Biscoff Truffles 

Ingredients:

-100g of lotus biscoff cookies

-50g of melted butter (I like mine kind of toasty so brown it all up—- do not burn it, though!)

-1/4 cup of cream cheese

-1 cup of chopped white chocolate chunks (or milk chocolate, all up to you!)

Recipe:

1. Put the cookies in a large ziplock bag and crush them.

2. Melt the butter until brown and toasty.

3. Mix in the crushed cookies and the butter (leave a little bit of the crushed cookies aside for garnish!)

4. Mix in the cream cheese until it achieves an almost wet sand look. Put in the fridge for 15-20 minutes.

5. Shape the mixture into little balls and freeze for an additional 30 minutes.

6. Melt the chocolate chunks in the microwave

7. Coat the Lotus Biscoff balls in the white chocolate and set aside.

9. Sprinkle crushed cookies on top and enjoy!

It’s that easy—- and super customizable. Got a jar of Lotus Biscoff spread on hand? You can mix it with the cream cheese and the white chocolate for an additional Lotus Biscoff flavor.
