Quarantine Cooking: Loaded Potato Skins ✨


Potatoes are some of the best ingredients to cook with. You can do so much with them. I love making mashed potatoes, fries, potato wedges, and of course, Loaded Potatoes.
For this dish, here are the very simple ingredients and household appliances you’ll be needing:
- 6 medium-sized potatoes, washed and scrubbed
- A bit of butter
- Salt
- Pepper
- Oil (Canola, Coconut, Olive, any)
- Mozzarella
- Swiss Gruyere
- Cheddar Cheese
- Full Cream Milk
- Smoked Porkloin or any topping of your choice
- A microwave
- An oven toaster
Step by step process
- Using a fork, poke several holes in the potatoes and bathed them in some oil. Do not overdo. Just make sure the potatoes are coated with oil. Lay them on a plate and lightly salt the outside of the potato.
- Microwave the potatoes for 9-10 minutes on high and once they’re soft enough, cut them in half.
- Scoop the inside of the potato and set it aside in a bowl. Make sure to be careful and not rip the skin of the potatoes.
- In the separate bowl, do your usual mashed potato recipe. I prefer mine a bit creamy so I add a bit more milk, add about 2 Tbsp of butter, add a dash of salt and a sprinkle of pepper. I also mixed in some mozzarella for that stretchy Aligot effect.
- Add the mashed potato back into the potato skins and top with remaining cheese: Swiss Gruyere & Cheddar. Top with desired meat.
- Broil the loaded potatoes in the toaster over for about 3 mins and cool down.



Et voila, you’ve got your own potato skins! It’s very easy to make and you can actually choose whatever cheese you want to use. It doesn’t have to be fancy. If you don’t have a microwave, you can always boil the potatoes and let them rest for a bit before cutting them in half.
